Mediterranean Oatmeal

Mediterranean Oatmeal
Ingredients
- 1/2 cup Positively Free Instant Oats
- 1 cup vegetable or chicken stock
- 1 dash dried oregano
- pepper to taste
- 1 clove garlic, minced
- 1/4 cup sliced black olives
- 1/4 cup sun-dried tomatoes, chopped (oil packed or reconsitituted)
- 1/4 cup feta cheese, crumbled
Directions
Step 1 | |
Combine oats, stock, oregano, garlic and pepper in a saucepan and cook over medium heat for 3 minutes, stirring occasionally. Add more stock if needed to keep consistency like mashed potatoes--not too thick. | |
Step 2 | |
Add vegetable mixture and stir to combine. Heat for 1 more minute on range. | |
Step 3 | |
Transfer to a bowl and top with feta cheese. Serves 3-4 as a side dish. |
