Homemade Pasta


  • 2 cups Baking Free™ Gluten-Free all purpose flour
  • 3/4 cups nonfat dry milk
  • 1 tablespoon guar gum
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 3 Large eggs
  • 3-4 tablespoons water
  • 1 tablespoon olive oil


This recipe can make pasta or noodles depending on how you wish to use it. Also pasta or noodles can be air dried for later use. Just remember to cook a couple of minutes longer if dried.


Step 1
Measure the flour, dry milk, guar gum, xanthan gum and salt into the bowl of a food processor and pulse to combine.
Step 2
Add the eggs, water and olive oil. Process until the dough gets stiff.
Step 3
Turn the dough out onto a lightly floured counter and knead for about 3 minutes or until smooth and flexible.
Step 4
Wrap dough in plastic and let it rest at room temperature for 30 minutes.
Step 5
Using a rolling pin, roll dough out on a lightly floured surface to about 1/4 inch thick. Using a pizza cutter cut dough into desired width for spaghetti or linguini.
Step 6
Bring a large pot of salted water to a rolling boil. Add the pasta, which will cook quickly. Begin checking for doneness by tasting a piece after just a few minutes of boiling (about 4 minutes). The pasta should be tender, not too soft or mushy.
Step 7
Drain in a colander set in the sink. Top with your favorite sauce or just butter and grated cheese.
