Banana Nut Muffins

Ingredients

  • 1 1/2 cup Baking Free™ Gluten-Free all purpose flour (124 g per cup)
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 bananas (medium, ripe)
  • 1 egg
  • 1/3 cup canola oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts

Directions

Step 1
Preheat oven to 375 degrees F.
Step 2
In a large bowl, combine dry ingredients.
Step 3
In another bowl, mash the bananas, add egg, add oil and vanilla; mix well. Stir into the dry ingredients just until moistened.
Step 4
Stir in the chopped nuts.
Step 5
Fill greased or paper lined muffin cups about half full.
Step 6
Bake at 375 degrees for 22-24 minutes or until a toothpick inserted in the center comes out clean.
Step 7
Cool for 10 minutes in the pan.
Step 8
Remove from pan and completely cool on wire rack. Makes about 12 muffins.
