DIY Gluten-Free Mix™ – Hush Puppies
 
Ingredients
Dry Mix
  • 1 cup yellow cornmeal
  • ¼ cup Baking Free gluten-free All Purpose Flour (31 g)
  • 1½ teaspoon baking powder
  • ½ teaspoon salt
Preparation
  • 1 egg, lightly beaten
  • ¾ cups milk, dairy or non-dairy
  • 1 Small onion, finely chopped

  • sprinkle cayenne pepper

Dry Mix
  1. Gater the dry mix ingredients and mark the zip bags. Set up the bags by rolling the tops of the zip bags about 2-inches down so they stay open. Set each one in a container to hold them upright.
  2. Carefully weigh the flour for each bag. Measure the cornmeal, baking powder and salt and add to each bag. Zip each bag closed and put into a gallon zip bag with a copy of the recipe for future baking.
Preparation
  1. Pour mix into a large bowl. Whisk to be sure ingredients are combined. In another bowl, whisk the egg, milk and onion together. Add this mix to the dry ingredients and stir to combine. Sometimes I sprinkle a little cayenne pepper into the batter for a little kick. Totally optional.
  2. In a deep fryer or a deep saucepan, heat the oil to 365 degrees F. I use a candy thermometer to be sure the oil is hot enough. Do not put any batter into the oil until it is very hot. Carefully spoon the batter into the oil--one tablespoon at a time. Don't crowd or the temp of the oil will drop too much. I did 2 spoonfuls, fry for 2-2½ minutes. Flip them as they brown and fry the other side just a minute or so until brown. Remove the hush puppies from the oil and drain on paper towels. Repeat until batter is all gone. Serve warm with ranch dressing or honey mustard dressing to dip.
